Maple Harvest Bowl

The Base
Couscous – 1.5 cups
Red Onion – 1 medium
Maple Syrup – 1/4 cup
(Boil the couscous. In a separate pan, caramelize the onion. Combine both then poor in maple syrup.)

The Vegetables
Beets – 3-4
Carrots – 1/2 lb
Butternut Squash – 1/2 large
Grape Tomatoes – 20
Bell Peppers – 3
Brown Sugar – 3 tbsp
Salt – 1/2 tsp
Maple Syrup – 1/4 cup
(Bake in the oven at 425 for 30 minutes)

Finishing Touches
Raisins – 1 cup
Sliced Almonds – 1 cup
